Sicilian Style Pizza Dough

A simple focaccia-based dough for making thick, airy Sicilian style pizza.

Ingredients

All-purpose flour 3 cups 360g
Warm water 1½ cups 355ml
Olive oil (plus more for assembly) 1½ tbsp 22ml
Kosher salt ¾ tbsp 9g
Dry yeast ½ tsp 1.5g
Sugar ½ tsp 2g

Instructions

  1. In a small bowl, combine the warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
  2. In a large bowl, combine the flour and salt. Pour in the yeast mixture and olive oil. Stir until a shaggy dough forms.
  3. Knead the dough until smooth and elastic, about 8-10 minutes.
  4. Coat the dough lightly with olive oil, cover, and let rise until doubled in size, about 1-2 hours.
  5. Generously oil a sheet pan. Press and stretch the dough to fill the pan. If it springs back, let it rest for 10 minutes and try again.
  6. Top and bake as desired for Sicilian style pizza.

Notes

  • The dough can also be cold-fermented in the refrigerator overnight for more flavor.
  • Use a generous amount of olive oil on the pan for a crispy, golden bottom.
