Sauce

Low-sodium soy sauce 1 cup 240 ml
Beef broth 1/2 cup 120 ml
Brown sugar 1/3 cup 70 g
Garlic, minced 3 cloves 3 cloves
Fresh ginger, grated 1 tbsp 6 g

Thickener

Cornstarch 2 tbsp 16 g
Water 2 tbsp 30 ml

Instructions

Sauce

  1. Combine the soy sauce, beef broth, brown sugar, minced garlic, and grated ginger in a bowl and whisk until the sugar dissolves.

Cook

  1. Place the sliced beef in the slow cooker and pour the sauce mixture over top, ensuring the meat is well coated.
  2. Cover and cook on LOW for 5–6 hours, or until the beef is very tender.
  3. In a small bowl, blend the cornstarch with 2 tablespoons of water until smooth. Stir the slurry into the slow cooker sauce.
  4. Scatter the matchstick carrots over the beef. Replace the lid and let everything cook for another 20–30 minutes, until the carrots are just tender and the sauce has thickened.
  5. Gently toss everything together and serve hot.
