Instructions
- Peel the potatoes, cut into chunks, and boil in salted water until fork-tender. Drain well.
- While still hot, mash the potatoes with butter until completely smooth.
- Mix in the Parmesan, salt, garlic powder, parsley, cornstarch, and egg until a uniform dough forms.
- Take a small handful of the mixture, press a mozzarella cube into the center, and shape into a ball, sealing the cheese inside.
- Heat oil to 350°F (175°C) and fry the balls in batches until golden brown and crispy on all sides.
