Instructions
Heat the olive oil in a large pot over medium heat. Sauté the onions until soft, then add the garlic and cook briefly.
Stir in the sweet Hungarian paprika, smoked paprika, and tomato paste.
Add the beef cubes and brown on all sides.
Pour in the beef broth and bring to a simmer. Cover and cook on low for 1½ to 2 hours until the beef is tender.
Add the carrots, potatoes, and bell pepper. Simmer for another 20 to 25 minutes until the vegetables are soft.
Adjust seasoning with salt and pepper before serving.
Notes
Serve hot with crusty bread or over egg noodles.
Caraway seeds are optional but add a traditional flavor.
For a thicker stew, remove the lid for the last 15 minutes of cooking.
